Slow Cooker Salsa Chicken

Slow Cooked Salsa Chicken.............
Ingredients

1.5kgs (3lbs) chicken/thighs, boneless and skinless (I had 11 thigh fillets - trim the fat off)

packet taco seasoning

1 onion diced fine
1 carrot shredded/grated
1 cup salsa, (jar full) 
1 cup diced/crushed canned tomatoes (440g)
1/2 cup water

3 tbsp. sour cream (added later)
(1/2 way thru layering)
Directions

 Place the chicken in a slow cooker. 

Sprinkle/pour the remaining ingredients in order over the chicken. 
Pour the half cup water over the mixture, set on low and cook for 6-8 hours. 
The meat is cooked when it shreds apart. 
When ready to serve, break up the chicken with two forks then stir in the sour cream.

1/2 my family had this with rice and the rest with corn chips/taco shells
They even asked for soft wraps.

If you want to spice it up use a hot salsa and taco seasoning.

  2. Just discovered this Chooky. Looks delicious. Mum has just started using her slow cooker this week. She lost her job at the abc and is now trying to find new interests. Not bad for a gal almost 80. Will try and print this off for her (and me). Thanks for sharing.
